Black Bean and Tomato Quesadillas Redux

Please forgive me for the copycat post. :) Normally I'm not a fan of black beans or tomatoes, but for some reason Johanna's recipe caught my attention and actually looked fairly appetizing. Perhaps it's the fact that you make something resembling a salsa and hide it between melted cheese and tortilla. mmmm now that sounds good! So I made this for dinner last night and was very pleased. Thanks for helping me sneak some beans and tomatoes into my diet!



Today I was able to eat some of the leftovers for lunch at work. I rolled up the "salsa" in a tortilla with some cheese, kind of like a burrito, and heated it up in the toaster oven. I don't have a picture of this, though, because I was at work, after all. I'm not sure what people would've thought of me photographing my lunch haha!

In my experience, people somehow get used to you taking pictures of the oddest things at the oddest times. I've had to explain that my photography is for a blog more than once!

you made me laugh with the lunch photo comment :) It looks really good! I think I will add chicken to mine, cause Shane will me more likely to request its addition to my recipe box.
