So it started with an innocent can in my pantry. This one to be exact.
As I stood there looking in the pantry for something to make for dinner, I turned the can around, read the recipe and decided to make it. I had all the ingredients on hand (which in itself is a miracle) and went to work. Here is how it turned out:
It is a creamy chicken and rice dish with cheese. Basically it is the can of soup with rice, water and a few basic spices, two butterflied chicken breasts, and some frozen vegetables (which I forgot to add) cooked covered in the oven for about an hour, then topped with melted cheese. It was good, but the chicken was a little bland and slightly dry, though that is partly my fault as I added extra rice and forgot to adjust the water.
I have gotten into making dinners though that produce decent amounts of taste, and have some substance to them, yet for as little as possible. Like this dish, probably cost $5 to make and it easily will feed us another dinner and maybe a lunch too, so in all about 5-6 servings.

So, what is it? I'm guessing something with chicken. I love that recipe that is on the back of a lot of cans of cream of mushroom. My mom makes it with pork chops instead of chicken though. It's just the soup and milk and pork chops. So easy!
ok seriously. what is my problem? i get so excited that there is something new to read that i go over it so fast and end up missing the whole point! aren't i so quirky and cute?
I am a recipe snob. I hate those recipes on the back of those cans. If it doens't come from a cookbook, epicurious.com or foodnetwork, I generally won't cook it. Aren't I such a recipe snob.
But Marie is a yarn snob so I think it must be OK that I'm a recipe snob. Right?
But good job Meagan. Cooking something is better than cooking nothing. Plus I am sure that at this point you are so tired that you are willing to cook anything so long as it takes 1 or 2 steps at the most. I know I was that way.
