I did read Alton's method thoroughly, and if I had made his cheesecake exactly I would have used his method exactly, because I didn't think it sounded that hard, but I didn't. I used, part of his method, the Cuisinart method and the Splenda recipe. I mixed the cream cheese, vanilla, sugar, eggs and flour in my food processor one ingredient at a time and it made this really smooth batter, oh, it looked so yummy. Then I put all that into a bowl and hand mixed the milk in and then I did my usual and didn't read all the directions so I just mixed in the dulce de leche to the whole batter. It still turned out really well; instead of swirls of dulce de leche, the whole thing has the caramel-y flavor. The cheesecake is smooth and delicious, with no cracks in it.
Things I think I did to avoid a crack: water bath and after it was done baking I turned off the oven, loosened the cheesecake from the sides of the springform pan and then left it in the oven with the door open until it was completely cooled.

oh! you should make that when i come to visit! i'll have you cooking up a storm for me! how many times do you think we could manage to send Del to the grocery store in two days? the water bath idea was a good one. i would have suggested that on Johanna's original post if i were a reliable and consistent blog member. i actually like the idea of the dulce stuff being fully mixed in. i don't like swirls in my food. seems inconsistent.
Good plan, now I know what to do with the rest of the dulce de leche. I bet we could send him at least half a dozen times or more. And then we could melt some extra dark chocolate and drizzle it on. Oh my goodness, doesn't that sound yummy?
That does look yummy - and yes, now I am satisfied with your report! I think I like the idea of mixing the dulce de leche in all the way too, because I thought the swirls were too sweet. No one else thought so, but I did. They all just said, "It's been a long time since you had any sugar, hasn't it?"
Oh, I forgot to mention befor I published that comment that I cannot really do a bath for the cheesecake because I don't have a one piece pan. Won't the springform pan leak water into the cheesecake?
I used a springform pan, too. All you have to do is wrap the outside in foil. Just make sure that it's a whole piece and wrap it up the sides. Then put it in the water bath. That's what I did, and my cake did not get watered at all.
I really like it with the dulce de leche mixed in, but I'd halve the sugar to half a cup instead of one cup.
