The one that is gonna win... (Tortilla Soup)

This is a recipe for Tortilla Soup that I got from my friend Patti. I have doctored it up and made it the yummiest soup IN THE WORLD. We eat the heck out of it. The seasoning measurements are just a guide. I almost never measure them, I just add more or less of what I like.

INGREDIENTS
· 1 onion, chopped
· 3 cloves garlic, minced
· 1 tablespoon olive oil
· 2.5 teaspoons chili powder (I use Tastefully Simple's Wahoo Chili seasoning)
· 1 teaspoon cumin
· 1/2 to 1 teaspoon (depending on taste) of Tastefully Simple's Fiesta Party Dip (if you have it) IF NOT - add some crushed red pepper and seasoning salt to taste
· 1 teaspoon lime juice
· 1 (14 ounce) can diced tomatoes OR 1 8oz can of tomato sauce (if you don't like chunks of tomatoes) OR 1/2-ish cup salsa if you are feeling frisky
· 4 (10.5 ounce) cans condensed chicken broth (I add a few chicken bullion cubes to the the water I boil the chicken in, then use about 5 1/2 cups of that water instead)
· ½ cup water
· 1 can white hominy
· 1 (4 ounce) can chopped green chili peppers
· 1 (15 ounce) can black beans, rinsed and drained (you can use pinto beans if you would rather)
· 1/4 cup chopped fresh cilantro (dried works just as well)
· 2 boneless chicken breast halves, cooked and cut into bite-sized pieces
(you can also add corn, but I do not like corn in my soup)
TOPPINGS
· crushed tortilla chips
· sliced avocado
· shredded Monterey Jack cheese (or pepper jack.. mmmm)
· chopped green onions
· sour cream
DIRECTIONS
1. In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in seasonings, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
2. Stir in hominy, chiles, beans, cilantro, and chicken. Simmer for at least 10 minutes.
3. Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, sour cream, and chopped green onion.

Mmmm...Tortilla soup is yummy. Mostly because there are no split peas in it. ;)

Jo, the answer is obvious - pick the one you like least and put it up - pronto! ;)

I cannot wait to post mine...I've got to finish two orders that have to be delivered tomorrow first though. Can't you tell? That's why I'm commenting here now!

maybe you could let the girls pick. or let del pick. if we keep this going for long enough, we'll probably repeat the soup category and you can use them all eventually.

ummm, what is hominy? and how spicy is this for us with sensitive stomachs???

Hominy is corn, basically. It's not spicy at all, not in the least.

hominy is the same things as chickpeas, right?

No, hominy is corn, not a chickpea. To make hominy, dried corn kernels are soaked in some sort of alkali or boiled in lime-water until the germ and outer hull separate from the kernel making it easier to digest and process. You get it canned next to the regular canned corn.

Meagan- the way it is written, it can be fairly spicy. If you don't like as much spice, omit the crushed red pepper/fiesta party dip and cut back a bit on the chili powder. The green chili peppers don't really add a lot of spice at all (in my opinion) but you can always cut those back to half a can as well.

i made this last night and it was pretty spicy. but i also put in a bunch of cayenne pepper and chili powder. the hominy was interesting... it has a very distinctive smell. i think maybe next time i'll skip it. We'll have to see what Darren thinks when he gets to try it tonight.

I made this last night and it was good! I didn't make it as spicy as written because I knew we weren't big "spicy food" people. I didn't mind the hominy at all. Leah, did you drain all the liquid before adding it to the soup? Anyway, we really enjoyed it!
