corn casserole part 2

I made this again recently. It was really yummy. Except, I forgot the eggs. I had no idea until I noticed a day or two later that they were still in the fridge. So I was wondering, what difference do you think that makes? If I make it again, should I go ahead and put the eggs back in?

I'm pretty sure the egg is supposed to make the resulting bread/cake fluffy. Was your bread really dense? I'm pretty sure I made this once with only one egg, because that is all I had. But, I don't remember thinking it came out badly. I'd try it with the eggs next time and see if you like it better. Reminds me of a science project that a girl did when I was in the third grade.

Funny- I recently made some blueberry muffins (from a box). Did not realize I had forgotten the oil till they were cooking and I noticed it sitting out. Actually, they did not taste very different at all... I still use oil in them though. I would try it next time, like Marie said...

yeah you're right it was pretty dense last time (not that that was a bad thing!) I made this today for our easter dinner and split the difference - I put 1 egg in. And seriously, everyone raved about the corn. it was probably the biggest hit of everything I made lol.

It's been a long time since I made that recipe. I should try it again, except it looks like I may need to go on an elimination diet because Andrew is showing signs of some food intollerance. Dairy would be the first to go. Without the sour cream and butter, this casserole would be quite unsatisfactory...

lol... I have done that. Mike and I think it comes out rather sweet, so we cut some of the sugar out by using unsweetened canned corn.... but we also add other things too.... peas, mixed veggies, etc to get more veggies in it.
