Beans! Beans! Good for your heart!

The more you eat them, the more you fart.
The more you fart, the better you feel.
So, let's have beans for every meal!

Shane taught me that. Isn't that funny? It makes me giggle every time.

So, I'm watching Food, Inc. and it's really making me want to become a vegetarian. And it's also making me hungry for beans. But, since I live with a MAN, I don't know how to cook without meat. Any of you have any good recipes for main dishes featuring beans?

It's been so long, I don't remember where I got this recipe from. We put grated cheddar cheese on it and eat it with tortilla chips. It's incredibly good. I don't use cilantro or yogurt.

BLACK BEAN SOUP

PREP TIME: 10 minutes
COOK TIME: 25 minutes

2 cans (16 ounces each) black beans, not drained
1 cup reduced-sodium chicken broth
Nonstick cooking spray
1 small onion, chopped (I used dried minced onion)
1 teaspoon minced garlic
1 jar (16 ounces) Thick & Chunky salsa (I used medium, you might like mild better)
4 teaspoons lime juice (I used lemon juice)
2 teaspoons ground cumin
¼ teaspoon crushed red pepper (optional)
1/3 cup plain yogurt (optional)
Fresh cilantro leaves (optional)

PLACE half the beans with liquid and broth in blender or food processor; cover. Blend until smooth. Coat a large saucepan with cooking spray. Heat over medium-high heat. Add onion and garlic; cook for 4 to 5 minutes or until onion is tender.

ADD blended bean mixture, remaining beans and liquid, salsa, lime juice, cumin and crushed red pepper. Bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 25 to 30 minutes. Serve topped with yogurt. Garnish with cilantro. Makes 4 servings.

Per serving: 233 calories, 0 g total fat (0 g sat. fat), 0 mg chol., 1,677 mg sodium, 42 g total carb, 10 g fiber, 5 g sugars, 12 g protein. Daily Values: 15% vit. A, 34% vit. C, 9% calcium, 15% iron.

I forgot to say that it eats more like a bean dip than a soup, and Del totally loves the stuff and he's no soup fan.

ooh- I remember that recipe Jo - awesome!
Although I have NO desire AT ALL to be vegetarian, I would love to have more recipes for meatless meals as well. Have a friend who is a vegetarian, but have never managed to bug her enough to get some meal ideas out of her! Will let you know if I do.

My experience with vegitarians is that they spend a lot of time trying to make meals seem like there are meat in them even though there isn't.... and eating a lot of meals that some of us would consider side dishes as the main course. So to make a meatless meal, drag out your favorite side dish recipe, make extra and call it a main meal....

Okay so maybe I am a little......um, smashed poopy diaper into the bedroom carpet during naptime made me get a little annoyed today....

i always heard it as "beans beans the magical fruit, the more you eat the more you toot" :)

I'm with Leah on the rhyme. I always heard, "Beans, beans, the musical fruit, the more you eat the more you toot." Of course, we weren't allowed to say the "f" word in our house! :)

The quesadilla salsa I make all the time when I don't feel like really cooking. The soup I don't make as often but when I do it's really yummy. I imagine you could omit the chicken.
