10 pounds of them, to be exact. Several months ago I signed up for a 10 lb bag of vidalia onions. Apparently the local high school band sells them as a fundraiser, and I thought, well I like onions, I like high school bands, I might as well buy some. Now after I had completely forgotten about them, they have been delivered and I need to figure out how to eat them before they go bad. I leave next Thursday to go on vacation and will be gone for 12 days. Do you still think they'll be good when I get back?
So ladies, do you have any recipes to help me out??

Per my *FAV* Alton Brown and Mark Bittman Vidalia onions have a higher sugar content and therefore a shorter shelf life. An ordinary onion has 7% sugar and a Vidalia onion has 12.5% sugar.
Storage? I'll quote Mr. Brown.
"So, if you're lucky enough to come into possession of, say, 25 pounds of Vidalia onions, try doing what they do down in Georgia. Just get yourself a cheap pair of panty hose—or dozens of cheap pairs of panty hose—and just string them up under the stairs or someplace cool and out of the way and just fill up the legs with onions. Just make sure you tie a good knot in between each one and then just snip them out as you need them. Or, just take the whole thing.

Light makes them sprout and sprouting makes them bitter so keep them in the dark.

No, don't put them in the fridge. There is moisture in the fridge and what are the two enemies of onions? Light and moisture.
Also, not related to using the onions, don't store them right next to potatoes because they make the potatoes rot faster. I would just tell you all the same things about keeping them fresh as Joanna - mostly because I get most of my information like that from Alton too! I love vidalia onions too! How yummy. I'll have to peruse my recipes and get back to you on that!
Better you than me, Leah. I like onions, but that is SOOOO many onions.
I have to say,though... this was a very informative post and comments... I am going to go to the kitchen and get my onions away from my potatoes now.....
