Random stuff and my recipe for this month!



Boy, have things been busy here. My niece has been here visiting for the past 3 weeks and leaves this Sunday. So, we have been carting the kids everywhere and trying to show them all a good time, here I am with my 2 oldest and my niece on the London Eye.
AND (very exciting) My yummy strawberry. That I grew. By myself. (though, for some reason all the others are teeny tiny and nearly dead) I did get one good one! I even cut it into 4 slices because all the kids wanted to taste!

On other news... here is my recipe for this month. (and I swear I eat food that is not Mexican.... I just happened to have a lot of newer yummy mexican recipes)




Best Spanish Rice in the World!

2-3 T oil
1 cup white rice (Uncle Ben's -not the instant kind)
1.5 cups water
1 small can tomato sauce (not paste)
1 small can sweet corn
3-4 cloves fresh garlic, chopped fine
garlic powder
salt
1 chicken bullion cube
ground red pepper (optional)

In a large frying pan, add oil and uncooked rice. Cook on medium high heat for about 3 minutes, stirring regularly. Add chopped garlic and cook another 3-5 minutes, until the rice is lightly browned. Remove from heat.

In a measuring cup, pour 4 oz (1/2 c) of the tomato sauce then add water to equal 2 cups. Add water mixture, chicken bullion and ½ C of sweet corn to browned rice. Sprinkle garlic powder and salt to taste. (I add a dash of ground red pepper here and it gives it just a little zing)

Cover and heat to boiling, then immediately lower heat and simmer for about 20 minutes. (Still in frying pan) It is ready when the liquid has been absorbed from rice.

YUMMY!!! OK- I add more than half cup of tomato sauce.. I like it better with more like 3/4 cup tom sauce. (with about the same amount of water... since the box calls for 2 1/4 cup of liquid for 1 cup rice anyway)

That's okay, I'm really in the mood for Mexican lately. Although, Spanish rice? Is that really Mexican? Hmmm... I smell a rat.

Wow, that London Eye thing is pretty darn cool. My brother and his family will be in your neck of the woods within the next four weeks. Pretty neat, eh? Sigh, I wonder if we'll ever be able to afford to go out there.
